Ruah Dining Series: Celebrating The Heart of Kalimantan with HANDEP and Masa Masa

There are moments that remind us why we do what we do, and the Ruah Dining Series we recently hosted with Masa Masa was one of those moments. At HANDEP, our passion is rooted in celebrating and sharing the traditions that make us who we are. Partnering with Masa Masa for their very first dining series was an incredible opportunity to bring the spirit of Kalimantan to Bali in a way that felt both genuine and unforgettable.

An Evening of True Flavors

Perkedel Jawau and Lemang with Serondeng

Food has always been a way for us to share stories, and this night was no different. The menu was carefully curated to showcase the bold, authentic flavors of Kalimantan. We kicked things off with Bajai Sangan Galapung—fresh pakis fern shoots fried in a light garlic batter—and Perkedel Jawau, hearty cassava croquettes that brought a taste of home to the table.

One of our favorite parts of the night was how we adapted on the fly. Originally, we planned to serve Ikan Patin, a fish central to Dayak cuisine. But when it wasn’t available in Bali, we turned to Barracuda. This twist showed the resilience and creativity that Kalimantan embodies. The Sangan Lauk Barracuda, paired with Kalumpe (cassava leaves simmered in creamy coconut milk), was a highlight—deeply flavorful and true to our roots.

To finish, we served Kue Bingka Kentang and Baram, a traditional fermented rice drink that added the perfect touch of sweetness to end the meal.

 

The Music That Wove It All Together

Adam Alaydrus and Emon were the heartbeat of the evening, their sape performances filling the air with music that spoke to our souls. The sound wasn’t just background noise; it was part of the story, creating a warm, inviting atmosphere that drew everyone in and made the night feel even more special.

 

More Than Just a Meal

The event was more than just a dining—it’s a celebration. Masa Masa’s vision of blending food with art and culture created an experience where every detail, from the rattan weaving displays to the food on the table, told a story. We were honored to be part of their first dining series, showcasing the beauty and depth of our Dayak heritage.

In Dayak culture, food isn’t just for eating—it’s a way to connect and show care. That spirit was at the heart of the evening. People came together, shared stories, laughed, and enjoyed each dish, just like in a Dayak home. The night was filled with warmth, love, and the simple joy of being together, making it an experience that felt truly meaningful.

So, What’s Next?

As the night ended, we heard the same question from so many: “When’s the next one?” While we don’t have a date set just yet, know that we’re already dreaming up what’s next. Our mission at HANDEP is to keep creating these moments of culture, community, and connection—and we can’t wait to do it again.
